If someone bids more than you, at any time, you will not win the auction, on eBay size really does matter... more than timing.

If you are the second highest bidder eBay will only make the high bidder pay up to one bid increment more than your bid, that is how eBay works, they pay more than you were prepared to pay, but not much more.

Sniping only ever protects you from others reacting to your bid.

This is the second time this has happened to me. Placed a bid using Gixen. All was well up to 5 minutes before the end of the auction. Got outbid by $1. How could this happen when Gixen places a bid 8 seconds before the end of the auction? Is there software out there that a seller can use to outbid a buyer by making the bid a dollar more than anything the buyer bids and, in effect, cancel the bid?
